Wines and Wine Making

Wine Making

Our wine making style blends traditional methods and state of the art techniques. Carefully hand picked grapes are hand sorted and fermented in small lots with a combination of punch down and pump-over cap management. Most red varietals undergo malolactic fermentation for a softer wine, and aging in oak barrels. We also use some of the latest organic yeasts and adjuncts for precise control of the wine chemistry, minimizing the need for sulfites to ensure the wine will age well. Sterile 0.45 micron filters remove yeast and bacteria and improve its clarity without the use of additives. Finally, the wine maker applies his art of blending with a light hand.
